Ideas picnic lunch?
Every year I organize a large group of girls in our annual weekend of girls / canoe trip and I 'm running out of ideas for what to have people bring, there are 35 of us this year. I have all the regular staples but I some ideas for something fun and different to bring the river with us. I have sandwiches and chips, but need something else ….. using Please …… oh and remember that we are on the river so it has to go well … LOL! Thank you in advance for your help.
Avocado, tomato and sweet onion salad LG 1 or 2 med. Lawyers juice 1 / 2 lemon (about 2 tsp.) 1 pint cherry tomatoes quart med. sweet onion (such as Vidalia or Maui) Rice vinegar 3 T 1 T kosher olive oil Salt and pepper to taste black coarsely 3-4 large lettuce leaves Peel avocado and remove pit. Cut avocado 1-inch pieces and sprinkle with lemon juice. Wash the tomatoes, cut each in half and add to the bowl with the lawyer. Slice the onion very fine and add in the bowl. Sprinkle vinegar over vegetables, season with salt and pepper (coarse kosher salt and pepper preferbly, but use what you have). Drizzle with oil the mixture and stir gently until all ingredients are well mixed. Serve on a lettuce leaf, if desired. ————————————————– ————————– Mexican salad with chick peas 4 cups cooked chickpeas, drained or 4 cups canned chickpeas (with from two 15 oz cans) rinsed 1 med. onion, chopped 2 cloves garlic, minced or pressed 3 jalapeno peppers, seeded and minced 2 canned chipotle peppers sauce, tomatoes, rinsed, seeded and minced (optional) 3 medium, peeled, seeded and chopped (optional) 4 T oil extra virgin olive 4 T fresh lime juice, or more to taste 3 T chopped fresh cilantro Salt and freshly ground black pepper Mix all ingredients and marinate 2 hours. Adjust salt and pepper and lemon juice to taste. Serve slightly chilled.
